Stilton Stuffed Mushrooms with Herb Butter

Garlic mushrooms have been putting in appearances at endless dinner parties up and down the country! These deliciously superior Stilton stuffed mushrooms are definitely for the more discerning gourmet.

  • 125g butter
  • 5 shallots finely chopped
  • 150g white bread crumbs
  • 125g blue Stilton cheese
  • 1 tbsp freshly chopped sage
  • 2 tbsp freshly chopped parsley
  • 300g open cap mushrooms

  • 5 shallots finely chopped
  • 5oz white bread crumbs
  • 4oz blue Stilton cheese
  • 1 tbsp freshly chopped sage
  • 2 tbsp freshly chopped parsley
  • 11oz open cap mushrooms

Method

  1. Preheat oven to 170 degrees C / 325 degrees F / Gas Mark 3. Melt butter in a saucepan, add the shallots and soften for 3-4 minutes.
  2. Place the bread in a food processor and reduce to crumbs. Add the breadcrumbs to the softened shallots, Stilton and herbs. Mix well.
  3. Remove the stems from the mushrooms, then press the stuffing lightly into the caps.
  4. Place on a baking tray and bake in the preheated oven for 35 minutes.
