Stilton Stuffed Marrow

Stilton Stuffed Marrow

This stuffed wonder is substantial and could be treated as a main course for vegetarians.


1 Medium Marrow, halved and cleaned of seeds
2 potatoes, peeled and cubed
1/4 tsp. black pepper
65g/2.5oz mashed Stilton cheese 25g/1oz. butter
I large chopped onion
100g/3-4oz frozen chopped spinach, thawed (about one-third of a 10-ounce box)
Pinch. salt
3/4 tsp dried thyme
1 tsp butter
Pinch salt
1 Tbsp bread crumbs
Vegetable oil spray


1. Preheat oven to 190C/375F/Gas5. Place marrow cut side down, in baking pan with 125ml/4floz water. Bake uncovered for approximately 40 minutes or until tender when pierced with a thin knife. Remove from oven and cool.
2. Meanwhile boil potatoes until tender. Mash with half of the butter, pepper, and Stilton cheese. Reserve.
3. Melt remaining butter in frying pan. Add onions and spinach and cook over medium heat for 3 minutes, stirring occasionally. Stir in salt and thyme and remove from heat and cool.
4. Blend mashed potato-Stilton mixture with spinach mixture. Scoop out marrow and mash flesh with 1-tsp. butter and salt. Gently mix together marrow and potato-spinach mixture, then mound into empty marrow halves. Sprinkle with breadcrumbs. Spray with vegetable oil spray to moisten.
5. Bake in preheated 200C/400F/Gas6 oven for 25-35 minutes or until stuffing is heated through and lightly brown on top.
