Ostrich Steaks With Blue Cheese

Serves 4

A glamorous and exotic dinner party dish.


  • 4 ostrich steaks (available from larger supermarkets; alternatively use 4 pork steaks)
  • 50g Blue Stilton, crumbled
  • 2 tbsp white wine
  • 1 tsp lemon juice
  • 1 heaped tsp freshly chopped parsley
  • 1 small garlic clove, crushed
  • Paprika
  • Black pepper
  • 1 tbsp olive Oil


1. Heat the oil in a large frying pan until hot. Add the ostrich steaks and cook over a medium heat for 3-4 minutes on each side.

2. Meanwhile, place the remaining ingredients in a heavy saucepan over a medium heat and bring to simmering point. Simmer, stirring constantly until well blended and heated through.

3. Remove the ostrich steaks from the pan and set aside in a warm oven.

4.  Add 4 tbsp of water to the frying pan and heat, scraping up any residue from the bottom of the pan.

5.  Add these pan juices to the cheese sauce and mix well.

6. Transfer the ostrich steaks to a warmed platter and drizzle the sauce over the top.    

Serve immediately with a selection of seasonal vegetables and new potatoes
