Rib Eye with Stilton Sauce

Steak and Stilton is a match made in heaven.

Ingredients

G / ML CUPS / OZ

The Steak

  • 2 good quality rib eye steaks
  • 1 tablespoon olive oil
  • 2 teaspoons crushed black pepper

The Sauce

  • 25g butter
  • 1tbsp flour
  • 150ml milk
  • 50g Stilton

To Garnish

  • Baby spinach, watercress and rocket leaves, grilled tomatoes

The Steak

  • 2 good quality rib eye steaks
  • 1 tablespoon olive oil
  • 2 teaspoons crushed black pepper

The Sauce

  • 3/4 oz butter
  • 1tbsp flour
  • 5 fl oz milk
  • 1 3/4 oz Stilton

To Garnish

  • Baby spinach, watercress and rocket leaves, grilled tomatoes

Method

  1. Melt the butter in a pan over a medium heat, then stir in the flour.
  2. Slowly add the milk, stirring all the time, until the sauce is smooth and all the milk has been added
  3. Bring to a simmer and add the chopped Stilton and stir. Cook until melted and the sauce has thickened slightly, then season to taste and serve.
  4. Meanwhile, brush the steaks with the oil, then coat in the crushed black pepper.
  5. Heat a frying pan over a high heat. When searing hot, add the steaks and cook for 2-3 minutes each side for medium-rare or 4-5 minutes each side for well done.
  6. Divide between 2 plates, scatter with the watercress and serve with the salad leaves and grilled tomatoes.
